We are thrilled to introduce our new culinary journey dinner series, Discover Italy, where we explore the rich and diverse regions of Italy through their food, culture, and traditions. Each event in this series will transport you to a different Italian region, immersing you in the unique flavours, history, and cultural nuances that define its character.

Discover the Flavours of Sicily

Our first event in the series will focus on Sicily—an island steeped in history, bathed in sunlight, and bursting with flavour. Known as the crossroads of the Mediterranean, Sicily’s culinary heritage reflects a blend of influences from Greeks, Arabs, Normans, and Spaniards, creating a truly unique food culture.

Curated by our Chef Moreno, this evening's menu celebrates Sicily's culinary bounty. The event will feature a selection of four starters, each embodying the bold flavours and fresh, locally-sourced ingredients Sicily is famous for:

Caponata: A sweet and sour medley of aubergines, tomatoes, celery, capers, and olives, this dish perfectly embodies the complex flavours of Sicilian cuisine.

Panelle: Crispy chickpea fritters seasoned with parsley and lemon—a simple yet beloved street food from Palermo.

Sarde a Beccafico: Sardines stuffed with pine nuts, raisins, and orange, showcasing Sicily’s rich maritime heritage and its signature sweet-savory balance.

Tartare di Tonno: Fresh tuna tartare, highlighting Sicily's incredible seafood and the island's subtle, elegant flavours.

For the main course, we will serve Fusilli al Pesto Trapanese e Gamberi Rossi. This traditional Sicilian pasta features a rich pesto made from almonds and sun-dried tomatoes, with succulent red prawns adding depth to this unique twist on the classic pesto.

To complete our Sicilian journey, dessert will be the iconic Cannolo Siciliano—crispy pastry shells filled with sweet ricotta, candied citrus, and chocolate. This beloved treat is as much a symbol of Sicily as the island’s ancient temples and stunning coastlines.

Perfect Pairings: Sicilian Wines

No Sicilian meal would be complete without the island's exceptional wines. Sicily’s vineyards, nurtured by volcanic soil and sun-drenched climate, produce some of Italy’s finest wines. Sommelier Fabio has selected two exceptional Sicilian wines to complement the evening’s menu:

Inzolia Terre Siciliane | Consiglio | Sicilia | 2022: A crisp white wine with notes of white fruit and citrus, finishing with a hint of tropical fruit.

Nero d’Avola Terre Siciliane | Consiglio | Sicilia | 2021: A light, aromatic red wine with flavours of ripe red fruit, sweet spice, and vanilla.

For those seeking a lighter refreshment, we’ll also offer Homemade Lemonade and a refreshing Sicilian Orange Spritz.
