Moreno Polverini is the co-founder and executive chef at Baccalà. Previously at the Four Seasons Hotels around the world, Moreno's style is rooted firmly in exceptional taste, beautiful presentation, local and seasonal ingredients, and authentic cooking techniques.

Elif Taner Polverini who is the operation manager, brings a wealth of enviable hospitality experience to the business, including time working at Le Petite Maison and the Four Seasons Hotel in Istanbul.

Fabio De Nicola brought Baccalà a wealth of experience, including time at glamorous hotspots like Zuma, Oblix and Hovarda. Fabio has always been fascinated by the world of wine, and loves to share his knowledge with any guest who visits the restaurant.
